Background: Today I'm making biscotti. We like hard cookies in this house but more importantly the recipe is easy. Usually these are made with almonds and sometimes dark chocolate, but I decided to try making marzipan biscotti as well. To quote blackwifeo, if you don't experiment you may as well just die.
Ingredients:
2 cups flour. | 1 Cup sugar |
1 tsp Baking Powder | 1/8 tsp Salt |
3 eggs | 1 tsp vanilla extract |
2 Tbsps Amaretto (Almond Liqueur) or Chocolate Liqueur (I used Kahlua) | |
1 tsp vanilla extract | 1 cup almonds (or dark chocolate chips or marzipan) |
Directions:
Preheat the oven to 300 degrees F (or 150 degrees C for us normal people). Combine the dry ingredients in a bowl. Then whisk the eggs and liqueur (Amaretto for almond based and Chocolate Liqueur or Kahlua for chocolate based) and the vanilla extract and add to the dry ingredients. This makes one sticky mess. Use a wooden spoon to mix, not your hands (I learned by experience). Mix in your almonds (or chocolate chips or marzipan or all three). Now pour the mixture out onto a baking sheet and using a LOT of flour on your hands pat it into a rectangle, about an inch high. It should be high and square, this is key. It will flatten as it's baked. Then bake the loaf for 50 mins.Once you take it out and while it's still warm, cut into slices (obviously I tried this while it was too hot and burned my fingertips).Then lay flat on a baking tray and bake again for between 10-20 mins a side. We like ours a little burned so I baked for 20 minutes. If you cut your biscotti thin, you can just bake on one side (blackwifeo's method). I like them thick and hard. p.s. The marzipan biscotti were a success, in my mind, the bitterness of the marzipan was sadly somewhat lost, but the chewy texture really worked for me.
